Tapioca starch is a fine, white powder extracted from cassava root, a tropical plant widely cultivated in Southeast Asia and South America. It's neutral in flavour and aroma, dissolving seamlessly into liquids. As a thickener, tapioca creates a glossy, translucent finish and produces a slippery, slightly gelatinous texture that works especially well in fruit fillings, sauces and Asian desserts.
